Recipe: How To Make A Fresh ‘Kunuun’ Drink


There seems to exist different kinds of Kunu. There is ‘Kunuun Zaki’ made up of whole grains of millet, sorghum or corn and also Kunu Aya made up of Tiger nut, dates, coconut and also Kunuun Gyada. They are fermented cereal beverages found mostly in the Northern part of Nigeria.

Previously, we have explained how to make Kunuun Zaki. Today’s focus is on tiger nut milk also known as Kunu Aya. Tiger nuts are known as Aya in Hausa, Ofio in Yoruba and Aki Awusa in Igbo.
After wondering what other uses one can have for these ingredients apart from chewing, I came across this recipe, I would like to share:

Ingredients:

5 cups of tiger nuts.
4 cups of dates.
1 whole coconut.
Vanilla essence.
Ginger.

Procedure:

Wash your tiger nut very thoroughly with your dates.
Remove the seeds in your dates.
Break your coconut carefully.
Take out your blender or take to the nearest grinding mill and blend smoothly. Add a little ginger to the mix.
Carefully remove the shaft with a sieve, gently strain the water through the sieve.
Place the shaft into the blender to extract all its juice.
Serve cold or use as a milk for your cereals.

Also, How to make Kuunu Gyada.

Kuunu Gyada:

Ingredients:

2 cups of roasted groundnuts
1 cup of soft white rice
½ lemon/lime
Sugar to taste

Procedure

In a small bowl, soak your rice in warm water for 30 minutes.
Peel your roasted groundnut skin, add a little water and blend. Sieve the milk out.
Cook the groundnut milk and soaked rice on medium heat. Keep stirring to avoid lumps.
Maintain the consistency till it softens.
Add your lemon juice and sugar to taste.
Your ‘kunuun’ is ready.
Healthy benefits of Kuunu Gyada:
Most people’s views about rice are that it is a storehouse of carbohydrates. It is that and so much more. It reduces blood pressure and aids the body digestion and metabolism. Lime and lemon are low in calories, and so they help to prevent and treat cancer.
Roasted groundnuts also reduces cholesterol levels to avoid blood clotting as it helps to allow free flow of the blood stream.
